My Crispy Prosciutto and Sausage Patties with Sage and Apples recipe is flavorful, fun, and easy to makeIt’s goes great on any Holiday table or as a tasty main dish at any time. I used Johnsonville® Sweet Italian Sausage for this recipe, and it’s perfect with the seasonings, wine, and apples.
A Full Flavored Recipe
Sage is one of my favorite herbs, especially in the Fall and Winter. It’s warm and inviting, and I just love it. It’s also a nice counterpoint to the sweetness of apples, a bit of spice, and some acidity. In this recipe, I use butter, shallots, white wine, Worcestershire sauce, and white wine vinegar for the sauce. Add in the sage, rosemary, and apples, and you have a really flavorful base to go with the crispy prosciutto and sausage patties. For the sausage patties, I added salt, pepper, and smoked paprika to the sausage along with breadcrumbs. Wrap them in prosciutto before putting in the grill and you’ll have a super dish that will earn raves from the family.
Cooking Crispy Prosciutto and Sausage Patties
I use a 10″ enameled cast iron skillet for this dish, and cook it entirely on my grill. For the sauce, I use the side burner, then after the apples cook a minute in the sauce, top them with the sausage patties. I don’t spoon the sauce over the patties, as I want the prosciutto to crisp up a bit. The sage and apple sauce is for spooning over the patties when it’s time to serve them, and it’s really a great combination.
While you’re cooking the sauce, preheat your grill to 325°. This will need to cook for about 25 minutes, or until the internal temperature of the sausage patty is above 160°. I always have a good meat thermometer around when I’m cooking. I’m very experienced in cooking, but thermometers don’t lie, but sometimes you can guess wrong on the temperature if you’re not using one. Always be safe when you cook!
Serving the Crispy Prosciutto and Sausage Patties
As I said earlier, I like serving this dish with holiday meals. You can make the patties smaller for more of a side-dish effect. If you do, adjust the cooking time as they will cook faster. I just place the skillet on a trivet and let the guests grab a patty and spoon the sauce over it. But, this will make a great main dish as well served with roasted potatoes and Brussel sprouts (which you can also cook in the grill!)

Ingredients
1 pound Sweet Italian Sausage,.
1 yellow onion, finely diced, divided
4 fresh sage leaves, chopped
1 stem rosemary
4 oz white wine
1 TBS white wine vinegar
2 medium shallots, chopped
1 tsp minced garlic
2 TBS breadcrumbs
1 TBS Worcestershire sauce
2 honey crisp apples, sliced into thin wedges
1 stick unsalted butter
1 tsp smoked paprika
Salt and pepper
Instructions
Mix sausage, onion, breadcrumbs, salt and pepper, and smoked paprika, in a mixing bowl. Form into 4 patties. Wrap each one with 2 slices of prosciutto. Set aside.
In a cast iron skillet, melt butter, and cook shallots. Add in white wine, white wine vinegar, and Worcestershire sauce. Whisk, and allow to reduce by 1/3. Add in apple wedges, cook for 1 minute, then add in prosciutto sausage patties on top of apples. Place in grill at 325 degrees and allow to cook for 25 minutes, or until sausage registers 160 degrees internal temperature. Remove, and serve, drizzling sauce over patties.
