Fresh Peas with Bacon Recipe


Description

Fresh peas are one of Summertime’s pleasures.  This recipe, with only some slight adjustments, will cook any type of fresh pea.  Peas that fit that bill are black-eyed peas,  purple hull peas, crowder peas, ladyslipper peas, and more.  You will need to keep an eye on the cooking time as some will get done at slightly different times than others. 


Ingredients

Scale

1 pound fresh peas

4 slices bacon, roughly chopped

2 quarts chicken stock

S&P to taste


Instructions

In a dutch oven, cook bacon until crispy, then remove from pot.  Remove all but 1 TBS drippings, then add in peas.  Stir for 1 to 2 minutes, then add 2 quarts of chicken stock.  

Bring stock to a boil, then reduce to a simmer.  Put bacon back in to pot and allow to simmer for around 40 minutes, or until peas are tender.  Adjust for salt and pepper and serve.
