A great olive salad makes a great muffuletta sandwich, and I love a good muffuletta sandwich! If you haven’t had one, it’s a delicious sandwich that started in New Orleans from Sicilian immigrants. It uses a large round loaf of sesame bread, with a crispy crust but a nice soft interior. While recipes vary, it usually contains mortadella, ham, salami, and a cheese (usually provolone.)
What’s olive salad?
The main claim to fame of a muffuletta however, is the wonderful Olive Salad. Olive salad is a combination of green olives, giardiniera (pickled cauliflower, peppers, carrots and celery,) peperoncini, and some seasonings (notably garlic.) Central grocery in New Orleans if often listed as the inventor (or at least the longest standing practitioner of) muffulettas. Their olive salad is generally available in grocery stores nationwide and is quite good.
When I have the time however, I like to make my own, as I get more control over the texture and flavor of the salad. It’s super easy, and you just need a food processor to make it!
This can be kept in the fridge for several days after making it, just add more olive oil to cover it and keep it sealed.

Olive Salad
Description
This flavorful olive salad is great on muffuletta sandwiches, or as an addition to many dishes such as deviled eggs. You’ll love it!
Ingredients
- 1/2 cup olives with pimentos
- 1/2 cup giardino salad
- 2–3 peperoncini
- 4 –6 pickled onions
- 1 clove garlic
- 2 TBS capers
- 1/4 cup olive oil
- juice from 1/2 lemon
- 1/4 tsp black pepper
Instructions
- all all ingredients except olive oil and lemon juice to a food processor. Pulse 2-3 times, until olives are chopped. Pour into a bowl and stir in olive oil and lemon juice.
