Description
These bourbon pecan pancakes will make the perfect “adult” brunch item or late breakfast with a loved one. I used my Pecan Syrup to give them an amazing finish!
Ingredients
2 cups AP flour
1/4 cup sugar
4 tsp baking powder
pinch of salt
2 cups buttermilk
1/4 cup melted butter, plus more for cooking
2 large eggs, mixed
2 TBS your favorite bourbon (if you want more bourbon flavor, add an extra TBS)
My Pecan Syrup, or your favorite pancake syrup.
Instructions
Mix all dry ingredients together. In a separate bowl, mix wet ingredients together
Pour the wet into the dry and mix until incorporated, but don’t over mix. Let sit 3-4 minutes before cooking. Spoon 2-3 TBS of batter into a medium hot skillet with butter. Cook until bubbles stop appearing on top, and about 1/2 are broken, about 2-3 minutes. Flip over and cook for an additional minute. Serve pancakes with more butter, powdered sugar, and Pecan Syrup.
