My very favorite herb has to be sage. My family always jokes about the amount of sage I put in Thanksgiving dressing. It’s a lot. Heaps. And guess what, if they don’t like it they don’t have to eat it. It’s delicious. So, when Fall finally hits I love to start using sage in many dishes. This super-easy recipe for Apple Pie Pork Chops with sage maple apples makes for a really delicious dinner!
A Taste of Fall
If you had to pick some ingredients that “taste like fall,” it would be apples, cinnamon, and maple syrup. I combined all of these in this recipe, and it really turned out well. Thick-cut pork chops are always a tasty, economical dinner protein, and they take flavors so well they were perfect for this recipe.
Apple Pie Pork Chops
To make these, you can either use an oven-proof skillet or a cast-iron skillet. I use apple pie spice, my Garlic Blend seasoning, and just a bit of flour to help brown the pork chops. The flour will also help add a little thickness to the delicious pan sauce that you’ll get after cooking. While I approximate the amount of apple pie spice for the recipe, in reality, I just use the little sprinkle part of the spice jar and very lightly covered the chops. Then a layer of my garlic blend, then the flour. Pat it all down and do the same for the other side. Let them sit before searing. I only do 2 chops at a time in the skillet so the pan doesn’t cool too much to brown them.
Maple Sage Apples
After you brown the chops, remove them from the skillet, add the butter, and sear the onions and apples. I like them to get a bit of caramelization on them to help bring out the flavor. Then, sprinkle on the sage, pour in the syrup, put the pork chops on top (with a MEATER or other oven thermometer) and put in the oven. When the pork chops are ready to rest (the MEATER will give you the time to pull them,) remove the chops, and put the pan back on a stove eye, and turn to medium-high. Reduce the pan drippings and syrup for 2-3 minutes, or until it thickens a bit. By then, your pork chops will be ready to serve. Just top each one with some of the apples and the sauce and enjoy!

This easy recipe will put dinner on the table in about 30 minutes, and it will absolutely deliver the taste of Fall. The apple pie spice, sage, and fresh apples accent the pork chops so well, and the maple syrup adds an amazing sweetness to the dish.
Ingredients
2 TBS olive oil
4 thick-cut pork chops
2 tsp Apple Pie Seasoning
1 TBS Melissa’s Garlic Blend Seasoning
1 TBS flour
1 TBS butter
4 Honeycrisp apples, cored and cut into ½” thick pieces
1 onion, cut into julienne strips
6–8 fresh sage leaves, chopped finely
½ cup maple syrup
Instructions
Pre-heat oven to 350 degrees. Heat an oven-proof skillet or cast iron pan to medium-high. Lightly sprinkle each side of pork chop with apple pie spice, Garlic Blend, and flour. Lightly pat.
Put olive oil in a skillet, and put in 2 pork chops. Brown on each side for 2-3 minutes. Remove, then repeat for the next two pork chops and remove them when browned.
Add butter to skillet, and add in onions and apples. Cook until apples are caramelized and onions are softened about 4-5 minutes. Sprinkle sage over apples, add maple syrup, and stir. Place pork chops on top and then place in oven. Cook for 20-25 minutes, or until the internal temperature of pork chops is 140 degrees. Remove pan from oven and place on stovetop.
Put pork chops on another plate and lightly cover to rest. Turn stove to medium-high and boil pan-drippings, apples, and syrup until sauce is reduced and lightly covers the back of a spoon. Remove from heat.
Plate pork chops and spoon over some apples and syrup mixture. Serve and enjoy!
