Super Chicken Salad

Chicken salad is a time-honored tradition in the South. This version is simple, but so delicious.

Ingredients

  • 1 lb pulled chicken
  • 1 cup mayo
  • 1 cup halved seedless grapes
  • 1/3 cup finely diced celery
  • 1/2 cup sweet pickle relish
  • 1/4 cup finely diced white onion
  • 1/4 cup chopped walnuts
  • 3/4 tsp kosher salt, or to taste
  • 3/4 tsp coarse ground black pepper, or to taste

Instructions

  • In a large bowl, mix all ingredients.
  • Place in fridge for 30 minutes to allow flavors to meld.
  • serve as sandwiches, scoop on a mixed green or tomato salad, or enjoy with crackers.
