Chipotle Bacon BBQ Shrimp

BBQ Shrimp is a dish that originated in Louisiana.  Rather than being grilled or cooked outside, the “BBQ” in the name refers to the spice selection that the dish is cooked with.  Traditionally, the shrimp are cooked with the head and shell left on. The delicious, spice-filled butter sauce that the shrimp are cooked in is served over them, with plenty of crusty French bread for dipping.  As you know, I’m not traditional though, and my version of Chipotle Bacon BBQ Shrimp is easy to cook and amazingly flavored.  Enjoy this dish as a wonderful appetizer or serve over rice as an entree.

Chipotle Bacon BBQ Shrimp

For my version, I use my Chipotle Pecan Seasoning and a little bit of my Grillin’ Shake.  Get a good quality shrimp for this, as the flavors definitely will shine through.  I use either 21-25 count shrimp or, my preference, 16-20 count shrimp.  I peel and devein the shrimp, but leave the tail on.  Wrap each shrimp in a half piece of thin-cut bacon and secure with a toothpick.  You can prep these a day ahead.  If you do, place in a bowl and put some ice in a resealable bag and lay on them before wrapping with plastic wrap and storing in the fridge.  This ensures they will stay fresh, and I store all my fresh seafood in this way.

Cooking BBQ Shrimp

With the bacon wrapping the shrimp, you’ll need to cook this dish a bit differently than you would with shell-on BBQ Shrimp.  I use a TBS of olive oil over medium heat, and let the shrimp cook in a skillet until the bacon is slightly browning on each side, about 5-7 minutes.  I lightly season the shrimp with Grillin’ Shake before cooking.  Then, add the butter, increase the heat, and add the Chipotle Pecan seasoning.  The flavor in the dish comes from a bit of a brulee effect of the seasoning in the skillet with the butter.  Continue to cook until bacon is seared and shrimp are cooked, 3 or 4 more minutes.  Serve with fresh French Bread for dipping up the wonderful sauce.

Chipotle Bacon BBQ Shrimp

Description

This easy and delicious dish will make any shrimp lover drool. Bacon wrapped shrimp cooked in a flavorful butter sauce will put this on your regular rotation.


Ingredients

Scale

1 lb 16-20 count shrimp

8–10 slices thin-cut bacon, cut in half

1 TBS olive oil

4 TBS salted butter

2–3 TBS Chipotle Pecan Seasoning

1/2 TBS Grillin’ Shake Seasoning

Lemon wedges and French Bread, for serving


Instructions

Peel and devein shrimp, leaving tail on.

Slice bacon slices in half, then wrap a half piece around each shrimp and secure with a toothpick.

Heat olive oil in a skillet over medium heat.  Lightly season shrimp with Grillin’ Shake.  Cook shrimp for 5-7 minutes to cook bacon, turning as needed. Add butter to pan and raise heat to medium high.  Season with Chipotle Pecan Seasoning and cook until done, another 3-4 minutes.  Remove shrimp from pan and pour butter sauce over shrimp.
