Description
This amazing salmon dish is super easy to prepare and will never fail to wow your family or guests. I cook this low and slow, and get an uber flavorful dish that works great hot or cold.
Ingredients
For the Salmon
1 3-4 lb salmon filet
3 TBS Lucky 7 Seasoning
1.5 TBS olive oil
1 TBS Thai basil, chopped
2 tsp Thai basil, chopped, for garnish, optional
For the Whole Grain Honey Mustard
2 TBS Whole Grain Mustard
2 TBS Dijon Mustard
1 TBS spicy brown mustard
1 TBS sugar
2 TBS mayo
3 TBS honey
1 tsp chopped chives
2 tsp chopped Thai Basil
Salt and pepper, to taste
½ tsp crushed red pepper flakes
Instructions
Place salmon on a sheet pan, skin side down. Mix Thai basil, Lucky 7, and olive oil in a small bowl. Spread over salmon, then lightly cover for 15 minutes.
Prepare smoker to run at 225 degrees. I used a Traeger Timberline with apple pellets for this dish. I augmented the smoke by using an apple mojo brick.
Place salmon on grill and let cook for 50 minutes, or until the thickest part of the filet reaches 140 degrees. Remover, cover, and rest for 10 minutes. Uncover, place on serving platter, sprinkle with Thai basil, if desired, and serve.
For the Whole Grain Honey Mustard
In a small bowl, add all ingredients and whisk thoroughly. Place in a serving bowl beside salmon.
